Paolo also offers long-term consulting to keep your beverage program exciting, up to date & keep your staff trained with relevant knowledge & up-selling techniques.

Paolo will analyse your current beverage program & look for areas of improvement and utilise profit potential. Paolo will recommend changes that are most appropriate for your restaurant concept & which would maximize profitability. Paolo will also evaluate your service & will make recommendations or provide training when needed.

Vino by Paolo was created by Paolo Saccone MS & his wife Kaly in 2018 whilst touring  wineries in Italy & around Europe. Sharing a love of wine matched with Paolo’s prestigious international studies and career, their ethos is to deliver a professional and tailored blend of services from restaurant wine consulting, mentoring, wine appreciation masterclasses & memorable tasting events with wines sourced from Italy & around the world. Paolo and Kalyopi are truly inspired by the power of wine. Their passion is to open & educate minds by simply bringing people together & creating beautiful memories with wine.
Born in Milan Italy, Paolo Saccone is an experienced Master Sommelier & Wine Consultant currently based in Sydney. He has worked not only in Italy & Australia but around the world in renowned Michelin Star restaurants in Paris & London. He has also been awarded for Best Wine List in numerous top Australian restaurants including in 2020 where he was awarded Gourmet Traveller Wine The Tony Hitchin Award, Best New Wine List, Mimi’s Coogee.

Paolo obtained his Master Sommelier Diploma from the Board of the Court of Master Sommeliers in 2025, Sydney Australia and is the 292 Sommelier in the world to hold this prestigious title.

He holds the title as number two Best Sommelier in Italy 2018, a very prestigious competition held in Milan by A.S.P.I (Associazione Sommellerie Professionale Italiana) and A.S.I. (Association de la Sommellerie Internationale).

Paolo was Best Sommelier of Australia 2021 runner-up and is a national candidate representing Australia in the Best Sommelier of Asia & Oceania & World competitions.
